Crispy chickpea smash

As a vegetarian I struggle to find savoury high protein breakfasts that don't involve eggs in some way. Don't get me wrong, I think eggs are awesome. But they have their time and place! I came across some information that chickpeas are high in protein so what did I do? I did what any normal person would do, I smashed them up and chucked them on toast. Boy oh boy are they delicious and actually really versatile! So here's a little recipe that takes no more than 10 minutes to make. You can also meal prep with a larger can of chickpeas!


Ingredients: 1 small can of chickpeas or a large can if meal prepping

Toast of your choice

Curry powder

Cumin

Tumeric

Salt & Pepper

Tomato (optional)

Spring onion/Chives (optional)

Relish (optional but recommended) How to: 1. Rinse the chickpeas thoroughly, place in a bowl. Add a pinch of the spices (currey powder, cumin, tumeric, salt and pepper), now mash these all up with a fork. The chickpeas should have softened in the can so this won't be too difficult. 2. Heat a pan on medium heat and place a small amount of healthy oil (avocado, olive etc) and then pour in the chickpeas. Stir the chickpeas occasionally until browned and well cooked. 3. Make your toast and add the condiments of your choice (butter, relish etc) 4. Add the chickpeas, sliced tomato and anything else you wanted to add to your toast. That's it. All done and delicious! We wanted it to be as simple as possible and delicious as possible. Play around with different spices and additions. You can also save the uncooked chickpeas in the fridge for the week where you can take some out everyday and cook them up.
